A land of “grands crus”, Burgundy contains unsuspected treasures in each village endowed with its own particularity. Two varieties reign supreme, Chardonnay and Pinot Noir, expressed in an infinite number of nuances. From Chablis to Meursault, the Côte de Nuits to the Côte Chalonnaise, each terroir writes its own signature. Climate, exposure, composition of the soil – clay-limestone, marl or pebbly –, define the essence of each vintage. This diversity of small plots known as the “Climats du Vignoble de Bourgogne” has won their inscription in UNESCO’s World Heritage. In the cellar, grand classics rub shoulders with insider vintages, unearthed with real passion. “It is not enough to propose famous labels, you also have to offer rare and unexpected vintages, capable of surprising the most discerning palates,” explain the sommeliers. While a “wow” effect is guaranteed at table, enjoyment is not limited to tasting. It also has its place in interactions between sommeliers and guests.
