What's the draw: With its picture windows facing the park and its impeccably clad tables, the Table de Levernois* unfurls all its elegance. Here, refinement cannot be measured, it is simply felt. The atmosphere is stylish though not ostentatious, giving priority to a gustatory experience. On the walls, a few artworks are delicately displayed, such as the Vine painting by artist Nat Bowen. Its yellow ochre from the soil of Burgundy captures the light and resonates with the Hostellerie’s soul, illustrating its fondness for its terroir. Perfect harmony between nature, art and gastronomy.
Who's cooking: After training at great French addresses, Chef Philippe Augé won a Michelin star in 2001 before dedicating his talent to the Hostellerie de Levernois in 2008. He has since orchestrated cuisine of sincere elegance, exalting products from the local terroir with a silversmith’s precision. His secret? High demands and complicity with Baptiste Courcet, the estate’s market gardener. Together, they select the finest treasures from the vegetable garden, creating bold associations in which taste takes pride of place.
What to order: Keeping pace with the seasons, the menu celebrates French culinary traditions at their tastiest. Truffles, Burgundy snails, frogs’ legs, farm-raised poultry: exceptional products expertly sublimated to treat the tastebuds of the most discerning gourmets. As for desserts, finesse is not forgotten: warm soufflé with Grand Marnier, blood orange sorbet, peaches infused with sarrazin, meringue and light vanilla mousse. The wine-list proposes more than 1,800 references, carefully selected by the sommelier team. An invitation to discover Burgundy’s finest vineyards.
The extra touch: A great restaurant is also a place for encounters and sharing. Bernard Bruyer, a passionate maître d’hôtel, passes on his love of the soil and top-notch products, including a platter of cheeses he unearths himself in all four corners of France. At the end of the meal, Chef Philippe Augé often comes to meet his guests, hear their reactions, and tell the stories behind his iconic dishes. More than just a gourmet stopover, the Table de Levernois* is an experience to be savoured - to the full.
