“I am known to have a strong, spontaneous personality!”… Very special, Séverine, mother of a family, is a born leader: “I am optimistic by nature. Which has served me well!” Aged just 16, discovering superb hotels, she had a revelation in Edinburgh. Her future was clear… “I have a BAC in literature, a BTS from Poligny, and I completed my Master’s degree in Chambéry.” She then applied to the Hilton in Roissy. Manageress? No. Chambermaid… Give up? Never! “I am energetic, determined, always with a smile!” Climbing the ladder, she became N°2 at the Hilton Park Lane in London. In 1998, she worked for MKG Consulting, in charge of luxury hotels. 

In Cannes, she found her mentor: Jean-Louis Bottigliero, General Manager of the Martinez. She had met him as a trainee at the Château de Gilly-lès-Cîteaux, then entrusted to Mr Bottigliero. At the Martinez, thanks to her talent, he appointed her as Restaurant Manager. And strategic positions followed one after another, from 2017 to 2021, when she became Owner Associate (Mademoiselle Val d’Isère).

In July 2021, this native of Dijon became an Owner: “Levernois is a project perpetuating the fine work of Jean-Louis and Susanne Bottigliero. I want it to progress, with the pool and the Villas. I want Levernois to remain one of Burgundy’s flagship hotels. And in Sainte Sabine, we are aiming for the 4-star hotel to become affiliated to Relais & Châteaux, with a well-being area, in the future.” She works closely with her GM, Axel Nérin: “I have almost the same professional career as Axel, he some 20 years younger,” she laughs…

Axel is also a winner: “A good pupil, I obtained my techno BAC in hospitality.” Very gifted, he has an exemplary career: Château d’Audrieu in Normandy, La Bastide de Gordes, Hôtel Barrière Le Golf in Deauville. “I studied for my Bachelor’s Degree at the IAE University of Chambéry. I then got my Master’s Degree (I). And Séverine was our class sponsor. I asked her to give me an assignment… She entrusted me with a project in a 5-star hotel in the South. In parallel, she also had an entrepreneurial project for Airelles Val d’Isère Mademoiselle. I was hired for this project. In Burgundy, she invited me to join her as N°1 for both hotels. Aged 24, I said yes !” 

Very loyal, Axel focuses on client satisfaction. Thoughtful and discreet, he works hard at his job: “Levernois is a great breath of fresh air. A beautiful place in which to set down your bags, in a 15-acre park. As for for Sainte Sabine, this 16th-C. château is a step back in time… From the castle, you can admire another one, that of Châteauneuf. And dining at the restaurant Le Lassey is unforgettable!”

“This year, we are installing a Burgundy stone lap pool in the park at Levernois. And building seven Villas with traditional roofs. Our guests will feel right at home, with their own keys.” Séverine concludes: “I love this message from a loyal client: Mademoiselle, you are changing everything, but make sure that the spirit remains…” As simple as that.
