Once upon a time… The Hostellerie de Levernois

If walls could talk, they would tell the remarkable story of how of this Burgundian country manor transformed into a 5-star Relais & Châteaux hotel.

Each exceptional story begins with a very special place. Not far from the vines of the Côte de Beaune, the Hostellerie de Levernois stands in the soothing aura of a genuine country manor, where echos of the family who lived here until the 1980's, still linger.

A legacy of emotion

Chef Jean Crotet was the first to sense the soul of the place, subtly reimagining the residence into a fine dining destination, ushering a new chapter of elegance and hospitality. In 2004, Jean-Louis and Suzanne Bottigliero fell for its timeless charm. Over nearly two decades, they infused the property with their own touch of refinement. Then in 2021, a new chapter began: the couple entrusted the keys to Séverine Pétilaire-Bellet, known as “Mademoiselle”, who became the owner. Accompanied by Axel Nérin, she endowed the Hostellerie de Levernois with a sensitive, contemporary vision.

Along the water's flow

This renewal has led to a series of to sumptuous developments, always in harmony with nature and local history. Sustainability and craftsmanship took center stage. From the use of eco-conscious materials to time-honored techniques. A stunning 30-meter lap pool was born, inspired by Burgundy's classic lavoirs. Then, with architects Claude Correia and Christophe Tollemer at the helm, seven timber-frame villas of 125 sq.m appeared in the 17.3-acre park. The latest showcase to date, the Sisley Spa opened its doors early this year. The Hostellerie de Levernois continues to compose its fine score, blending its heritage with modernity.
