Not a minute goes by at the Hostellerie de Levernois without the staff being busy. At reception, Françoise Verdereau, the hotel manager’s assistant checks that her team is ready. Conscientiously, she sees to the final details to make each stay an unforgettable moment. “For me, anticipating our guests' needs is the basis of excellence”.
Discreet but assertive, Françoise knows exactly how to share her quality expertise: “I've been welcoming our guests for over ten years now. I've seen some families' children grow up! It's always a great and genuine pleasure for me to welcome them”. Françoise, who arrived as events manager in 2009, was very rapidly won over by “this charming hotel where elegance and refinement unite”, as she likes to say. Originally from Beaune, it was important for her to be in tune with the culture and values of her region.
Today, her priorities are very clear, “the wellbeing of the guests is essential. I’m fully committed to sharing my passion. But also to the fulfilment of my teams. They are all fine professionals who understand our clients very well and know exactly how to please them”.
Some of them have been here since the very beginning of the adventure. Like the vivacious Ghislaine de Saint-Felix, known as “Mimi”. “I’m doing my 41st season. This is my home and I’ve seen it evolve!” Since her arrival in 1983, she has known all the owners and has witnessed the many developments.
“Mademoiselle has succeeded in preserving the authenticity of the Hostellerie de Levernois while giving it a more modern feel”. And even after all these years, Ghislaine smiles at the fact that here there is never a dull moment. “I’ve worked in just about every post. And each year brings new surprises. The teams, the changes, the exchanges with the guests… it’s all part of my daily life”.
Soon to be retiring, Ghislaine only wishes one thing, to pass on her experience and her love of the house: “as much the experience of life as that of the profession… Because nothing can be forgotten when it is shared with generosity”. She is delighted with her current collaboration with Mademoiselle as well as with Axel Nérin, the general manager of the establishment since 2021, with whom she enjoys a unique relationship: “Working alongside him, I learn every day. He feeds my old age with his youth”.
This love for the house extends to the kitchens where the starred chef Philippe Augé concocts a fine, subtle and creative cuisine that is appropriately traditional and unfailingly tasty. “I always want to do a lot of things, to re-create myself”, he states with great enthusiasm.
The Maître d'hôtel Bernard Bruyer animates the dining room with his infectious good humour. While the Westhoffen-born Alsatian head sommelier, David Kubler, explains with subtlety the multiple facets of a breathtakingly rich wine list.
